Veal Kofta Coconut Curry

Kofta Curry has never been easier to make now thanks to Al Safa's Veal Kofta!! Saving you much needed time to make this classic dish!!

Ingredients
  

  • 2 Boxes Al Safa's Veal Kofta
  • 1 ½ cup Coconut Cream
  • 2 ½ tbsp Red Curry Paste
  • 1 tbsp Coconut Oil
  • 1 tbsp Garlic Paste
  • 1 tbsp Ginger Paste
  • 2 Green Chillies
  • 2 Limes (juices)
  • Garnish of choice (fresh chillies/cilantro)

Instructions

Al Safa's Veal Kofta

  • Preheat oven to 400°F (205°C).
  • Remove packaging and bake Al Safa's Veal Kofta in the oven on the middle rack for 22-25 minutes, turning once. Cook to a minimum internal temperature of 160°F (71°C).
  • Once fully cooked, set aside for later.

Kofta Coconut Curry

  • In a hot skillet, add in coconut oil and chillies. Sauté and mix for a couple minutes.
  • Add in ginger and garlic, mix well.
  • Add in red curry paste and mix well.
  • Add in coconut cream and whisk together. Simmer for a few minutes.
  • Add in lime juices and simmer for 5 minutes.
  • Add in fully cooked Veal Kofta and mix. Let it simmer for 5 minutes.
  • Remove from heat and garnish with your choice, serve with rice or naan. Enjoy!!
